We learned when John Mallett speaks, you listen because he’s about to drop some knowledge on you. We sat down with John for about an hour as we talked about everything from beer, brewery making, craft beer in the 90s, and we lay down the gauntlet challenge as he said he could get any brewery equipment out, and we inform him of former brewery Etouffee, the short lived Brew-Pub above the now permanently closed AMC Star Southfield where rumor has it the brewing equipment was put in before the wall, so it’s still sitting there unused!
